Ginataang Tilapia (Fish in coconut milk)

Ingredients:

2-3 medium Tilapia fish
1 small onion chopped
3 cloves garlic, chopped
1 thumb size ginger chopped
1 can or more coconut milk
2 Siling haba
Malunggay leaves
2 tbsp. fish sauce
squash(optional)



Procedure:
In a big pan, Pour the coconut milk. Add garlic, onion, and ginger. Add 1/2 cup of water. Bring to boil.
After a boil, add tilapia fish and siling haba,and the squash. Season with fish sauce...
After couple of minutes, flip off the tilapia to other side. Simmer for another few minutes until both sides are cooked.

Diningding

My Ingredients:

1 cup saluyot leaves (jute leaves)
Leftover fried fish
2 Tomatoes, quartered
Malunggay leaves
1 bundle Sitaw (String bean) cut into 1" strips
ginger
1/5 cup.bagoong isda juice





Procedure:
In a casserole, boil 2cups of water along with tomato, sitaw, saluyot, malunggay leaves,ginger, simmer for 10 minutes. Add bagoong isda juice using strainer to separate solid particle., add vetsin and leftover fried fish. Bring to boil and served diningding while it is hot along with hot rice.

Pineapple Chicken (Pininyahang Manok)

Pininyahang manok is made of sweet pineapple flavor, with coconut milk or evaporated milk -producing it very tasty...Check out my version of how to cook it in a very simple way. Enjoy! :)


1 whole chicken, cut into serving pieces
1 can pineapple tidbits, set aside the syrup
1 Tbsp oil
3 cloves garlic, minced
1 medium-sized onions, chopped
1/2 cup evaporated milk or coconut milk
patis (fish sauce), to taste
bellpepper


DIRECTIONS:

-Marinade the chicken with the pineapple syrup for a few minutes.

-When done, set aside the chicken on one side of the pot.

-Add the oil on a heated pan/wok, saute garlic and onions then mix together with the marinated chicken and bellpepper...cook for about a minute.

-Add the pineapple chunks then pour the evaporated milk. Cover and bring to a simmer...
-By the time the chicken is done, the sauce would be rather thick and creamy, stir then season with patis.

-Simmer again for 2 minutes then turn-off the heat.
-that's it! :)

Ground Pork (Giniling na Baboy)

Ground Porks main ingredient is pork and it is sauteed together with vegetables in tomato sauce...













Ingredients:
-cooking oil
-half kilo ground pork
-potatoes cut into cubes
-carrots cut into cubes
-minced garlic
-sliced onion
-red and green bellpepper cut into cubes
-fish sauce
-soy sauce
-half cup tomato sauce
-raisins
-salt and pepper to taste

DIRECTIONS:
-Add onion and ginger to a pan and stir. Also add pork and wait until it starts to get brown
-Add the potatoes,carrots and bellpepper.. Wait aprx. 15 minutes until vegetables are cooked
-Add half cup of water...
-Add the raisins...3tablespoons of fish sauce and 2 tablespoons of soy sauce...let it boil for 5 minutes
-Add salt and pepper for taste
-Serve it together with rice  :)

Adobong Pusit

Ingredients:

half kilo of fresh squids
vinegar
garlic
salt and pepper to taste
onion-sliced
medium-sized tomatoes, chopped
monosodium glutamate(vetsin)

DIRECTIONS:

-Wash the squids very well. Remove the long thin membrane in the head and slit the eyes to bring out the ink. Cut squids into 1/2 inch slices crosswise.Place the squids in a saucepan with vinegar, 6 cloves garlic crushed, salt and pepper. Cover and cook slowly until the squids are tender

   
-Crush remaining garlic and saute in a little oil in another pan. Add the onion and tomatoes and cook until tomatoes are very soft. Add the squids and the liquid in which they were boiled. Simmer for 7 minutes. Season with salt, pepper and vetsin.

Stir Fried Ground Beef

WHAT'S FOR LUNCH?

1 lb. ground beef, low-fat
2 tbsps. cooking oil
2 garlic cloves, peeled and mashed
1 small red onion, chopped
2 tbsps. fish sauce
2 large tomatoes, seeded and diced
1-2 tbsps. soy sauce, depending on taste
1/2 c. water
3 small new potatoes, peeled and diced
1 large carrot, peeled and diced
1 small green bell pepper, seeded and diced
1/2 c. frozen peas
1/4 c. raisins
salt and pepper


Directions:

Heat oil in a wok over medium high heat. Add garlic and stir fry till almost, but not quite brown. Add onions and cook till translucent. Add ground beef and cook till the pink is gone from the meat. Add fish sauce and stiry fry another minute or two. Add tomatoes, cover and cook about 2 mintues or until tomatoes are tender enough to mash and incorporate into cooking meat. Add the soy sauce and stir well. Add the water, potatoes and carrots. Stir and bring to a boil. Cover and allow to simmer over moderately low heat about 5 minutes or until potatoes are tender. Add the rest of the ingredients and cook covered until peppers are crips-tender, about 3 minutes. Season with salt and pepper to taste.

Kare-Kare for dinner :)

 My husband asked for it :)
Ingredients are:

  • 1/2 kilo of oxtripe (cut 2 inch long) or a combination of beef, tripe and oxtail
  • 3 cups of peanut butter
  • 1/4 cup grounded toasted rice
  • 1/2 cup cooked bagoong alamang (anchovies)
  • 2 pieces onions, diced
  • 2 heads of garlic, minced
  • 4 tablespoons atsuete oil
  • 4 pieces eggplant, sliced 1 inch thick
  • 1 bundle Pechay (Bok choy) cut into 2 pieces
  • 1 bundle of sitaw (string beans) cut to 2" long
  • 1 banana bud, cut similar to eggplant slices, blanch in boiling water
  • 1/2 cup oil
  • 8 cups of water
  • Salt to taste
  •  In a stock pot, boil beef, tripe and oxtails in water for an hour or until cooked. Strain and keep the stock.
  • In a big pan or wok, heat oil and atsuete oil.
  • Sauté garlic, onions until golden brown, then add the stock, toasted rice, beef, oxtail and peanut butter. Bring to a boil and simmer for 15 minutes. Salt to taste.
  • Add the eggplant, string beans, pechay and banana bud. Cook the vegetables for a few minutes - Do not overcook the vegetables.
  • Serve with bagoong on the side and hot plain rice

Pinakbet or pakbet
 i cooked vegetables for lunch! my husband and daughter liked it...
it's so easy to cook...
Ingredients:


  • 2 Amapalya (bitter melons) sliced to bite size pieces
  • 2 eggplants
  • 5 pieces of okra, cut in two
  • 1 head garlic, minced
  • shrimp
  • 3 tomatoes, sliced
  • 1 tablespoon of ginger, crushed and sliced
  • 4 tablespoons bagoong isda or bagoong alamang
  • string beans (sitaw)
  •    squash (kalabasa) 

    How to cook it?
  • In a cooking pan, heat oil and saute garlic, onion, ginger and tomatoes.
  • Add the shrimp in the pan .Add 2cups of  water.. Bring to a boil...
  • Add in all the vegetables and cook until the vegetables are done, careful not to overcook.
  • Salt and msg to taste.
  • Serve hot with plain rice

What's for Dinner?


Well, for dinner, I cooked porkchop and ginataang alimango... (or whatever it is called)...

for the ginataang alimango, you will need :
onion,garlic, ginger, siling haba, crablet, sitaw and the gata

...just saute all of 'em for 2min..., then add the gata, simmer it for 5 - 10min...

fresh or hard boiled?

Can’t remember if an egg is fresh or hard boiled? Just spin the egg. If it wobbles, it’s raw. If it spins easily, it’s hard boiled.
