Chicken Afritada

Ingredients:
1 head garlic, minced
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
1 kilo chicken, cut into pieces
5 pieces potatoes, peeled and halved
2 pieces carrots, peeled and cut
1 red onion, diced
chicken broth cubes
1 cup tomato sauce
2 tablespoons of patis (fish sauce)
3 tablespoons of cooking oil
1 tbsp soy sauce


Cooking Procedure:
   In a cooking pot or wok, heat oil.
  Sauté garlic and onions.Add chicken...add the soy sauce...Add potatoes and carrots and continue to cook for 10 minutes or until the potatoes and carrots are cooked.
 Add the green and red bell peppers, simmer for an additional minute or two.Add half cup of water and bring to boil.
Pour the tomato sauce. Bring to a boil and allow to simmer for 10 minutes.
Salt and pepper to taste... Serve with rice. Enjoy! :)

Green Mango Salad

Here is my recipe of ensaladang hilaw na manga or green mango salad. Prepared as side dish for any thing grilled or fried.



Ingredients:
1/2 kilo green mangoes , sliced into cubes
2 medium size tomato, cut into thin small cubes
1 small size onion, minced
1-2 hot chillies, chopped
sauteed salted shrimp paste, bagoong alamang



Procedure:
In a big bowl mix/toss all ingredients. Quantity of bagoong alamang to suit taste.It must be serve as soon as possible to enjoy the crispiness of the green mango. Serve as side dish for grilled or fried fish or meat.

Buttered Vegetable

A healthy all- vegetable dish...
Quick and easy side dish to prepare.




Ingredients:
garlic
onion
1 medium cauliflower, sliced
1 medium broccoli, sliced
3 medium carrots, cubed
cabbage/pechay
corn (boiled and cut into 2)
2 tbsp butter
salt and pepper to taste

Procedure:
Wash all the vegetables.
In a wok, saute garlic and onion. Add all the vegetables and saute for about 5 minutes. Add butter until it melts , add salt and pepper then turn off heat.
Add corn in plating the dish. Enjoy! :)

Eggplant Omelet

Ingredients :

3-4 talong (long variety), steamed, broiled, grilled or boiled until soft but not too mushy
2 eggs, beaten
1 c. of flour or bread crumbs
salt and pepper to taste
cooking oil for frying





Cooking procedure :
Peel off the skins of the eggplants, leaving the stems on. Flatten the bodies with the back of fork.

In a shallow bowl, blend together the beaten eggs and flour until smooth. Season with salt and pepper.

Heat the cooking oil in a wok or frying pan until it starts to smoke. Holding the eggplant by the stem, dip it in the batter and lower onto the hot oil. Fry until golden.
Serve with rice. Enjoy! :)

Stir-Fried Bean Sprouts

Ingredients:
1 kilo bean sprouts (toge)
cabbage, sliced thinly
1 small carrot, sliced thinly
1/2 kilo bagiuo beans, sliced thinly
shrimps
tokwa ,cut into cubes
1 onion, sliced
1 clove garlic, crushed
salt and pepper to taste
sugar

Procedures:
In a wok, saute garlic and onions.
Add the baguio beans, and carrots,cabbage. Seasoned with salt and pepper and stir for about a minute. Fry the tokwa in another pan. Add in cooking vegetables and add the shrimps. Add a pinch of sugar.
Lastly combine the bean sprouts in the wok. Saute for 10minutes...Serve with rice... Enjoy! :)

Fried Vegetable Roll



Ingredients:

3 cups togue, bean sprout,
1 cup green beans, thinly sliced diagonally
1 medium size carrot, cut into strips
2 cups cabbage, shredded
1/2 head garlic, choped
1 medium size onion, chopped
1 cup sayote cut into strips
1/4 c. patis
salt and pepper
vegetable oil
lumpia /spring roll wrappers


Wash all the vegetables and drain... In a wok, sauté garlic and onion,Add all vegetables and quikly stir cook for a minute.Add in patis and cook for another 2-3 minutes.Let cool and keep aside vegetable filling. Place 1 tablespoon of filling on one side of each wrapper and wrap tightly, secure wrapper by lightly dabbing with water on wrapper edge. In a wok deep fry lumpia at medium to low heat for 2-3 minutes or until wrapper turns to golden brown.
Serve with vinegar, chopped onion and garlic with chili mixture dip. enjoy!

Corned Beef for Breakfast :)

Can't think of anything to cook for breakfast... i just grabbed the corned beef from the cabinet... opened the fridge... grabbed the potato and chicharo... and that's it! sauteed in onion, garlic and tomato...
