Inihaw na Tilapia

This is one of the simplest Filipino fish dishes you can make...

Ingredients:
 1 fresh tilapia, trimmed and cleaned (gutted)
2 tablespoons minced garlic
1 tablespoon minced ginger
1/2 cup chopped onions
1/2 cup chopped tomatoes
salt to taste


Procedure:
Mix garlic, ginger if using, onions, tomatoes, salt in a small bowl. Carefully insert this mixture into fish cavity and into each cut/slash you’ve made. Wrap the whole fish in banana leaves or foil and cook on the grill for about 20 minutes or just until cooked through and fish is fragrant.
